South African Samphire

freshness, flavour and forager’s flair

Based on pristine land in the Klipdale village of the Overberg region of the Western Cape, SeeKoraal is a bespoke supplier of freshly harvested samphire to South Africa’s top chefs, restaurants and food service suppliers.

Also known as sea beans or sea asparagus, samphire is another culinary name for the succulent stalks of Salicornia, wild-growing plants that thrive in inter-tidal habitats across the world.

The samphire taste sensation

SeeKoraal – Samphire (Salcornica) freshly foraged and supplied to South African restaurants

For a sensational texture and fresh flavour burst, innovative chefs and forager food creators use samphire, fresh or pickled, as an edible garnish or hero ingredient in salads and charcuterie cheese boards.

It is also blanched, steamed, grilled and sauteed as a wild vegetable pairing for a wide range of dishes including pastas and risottos. With its unique salty brightness and juicy crunch, samphire particularly elevates all kinds of seafood dishes.

Due to its clean, briny flavour with light bitter undertones, samphire is also known as ‘green salt’ and is recommended as a healthy salt alternative.

Freshly foraged, delivered to your door by SeeKoraal

South Africa has four known species of Salicornia that are widespread in the coastal regions of the country. Although commonly enjoyed throughout Asia, Europe and North America for centuries, samphire is still an unusual culinary ingredient in South Africa, offering diners novelty and an intriguing taste adventure. Samphire appeals to South African chefs and menu creators who are focused on originality, uniqueness and local ingredients.

SeeKoraal freshly harvests wild samphire from our own land as well as selected locales in the Overberg. On order, it is picked fresh, sorted for quality, washed, stored in sealed food-safe plastic bags and delivered promptly under cold chain conditions. Our samphire will retain ideal freshness and succulence for 1-2 weeks after harvesting.
